Easy Berry Crumble with Oat Topping

I absolutely love a good fruit crumble, and this easy berry version is one of my favorites for a reason. It's incredibly forgiving, meaning even if you're new to baking, you can whip this up without any stress. The combination of sweet, slightly tart berries bubbling under a perfectly crisp, golden oat topping is just pure comfort in a dish. It’s the perfect dessert for a cozy night in or a casual gathering.
Ingredients
- 4 cups mixed berries (fresh or frozen)
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch square baking dish or an equivalent-sized oven-safe dish.
- In a medium bowl, gently toss the mixed berries with the granulated sugar, cornstarch, and lemon juice until evenly coated. Pour the berry mixture into the prepared baking dish.
- In a separate medium bowl, whisk together the all-purpose flour, rolled oats, brown sugar, and cinnamon.
- Add the cold, cubed butter to the dry ingredients. Use a pastry blender, fork, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Sprinkle the oat crumble topping evenly over the berry mixture in the baking dish.
- Bake for 35-40 minutes, or until the topping is golden brown and the berry filling is bubbly.
- Let the crumble cool for at least 10 minutes before serving. It's delicious served warm on its own or with a scoop of vanilla ice cream.
