Quick Ground Beef and Black Bean Tostadas

I love having a quick and satisfying meal on hand, and these ground beef and black bean tostadas are exactly that. Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (4 ounce) can diced green chilies, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 8 tostada shells
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the ground beef to the skillet. Cook, breaking it up with a spatula, until browned. Drain off any excess grease.
- Stir in the minced garlic, chili powder, and cumin. Cook for 1 minute until fragrant.
- Add the rinsed black beans and diced green chilies (with their liquid) to the skillet. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low and cook for 5-7 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
- Spoon the beef and bean mixture generously onto each tostada shell.
- Top with your favorite optional toppings like shredded lettuce, diced tomatoes, shredded cheese, sour cream, or salsa. Serve immediately.
