Quick Peanut Chicken Skillet with Bell Peppers

Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 2 tablespoons vegetable oil, divided
- 1 large bell pepper (any color), sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1/4 cup water (or chicken broth)
- Cooked rice, for serving
- Chopped peanuts and cilantro, for garnish (optional)
Instructions
- Pat the chicken pieces dry with paper towels and season with salt and pepper.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced bell pepper and onion and cook, stirring occasionally, until tender-crisp, about 5 minutes.
- Add the minced garlic and cook for 30 seconds until fragrant.
- In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, grated ginger, and water until smooth.
- Pour the peanut sauce into the skillet with the vegetables. Stir well to combine and bring to a simmer.
- Return the cooked chicken to the skillet and toss to coat evenly in the sauce. Cook for another 1-2 minutes until heated through.
- Serve the peanut chicken and vegetable mixture over cooked rice. Garnish with chopped peanuts and cilantro, if desired.
