Quick Skillet Pork and Peach Hash

I love finding recipes that feel a little fancy but are secretly super simple, and this pork and peach hash is exactly that. It’s my go-to when I want something satisfying and flavorful without spending hours in the kitchen. The combination of savory pork and sweet, slightly caramelized peaches is just divine, and it all comes together in one skillet, meaning less cleanup for me! Even if you're new to cooking, you'll find this recipe incredibly forgiving and rewarding.
Ingredients
- 1 tbsp olive oil
- 1 lb pork tenderloin, cut into ½-inch cubes
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp smoked paprika
- 1 medium red onion, thinly sliced
- 2 cloves garlic, minced
- 2 ripe peaches, pitted and cut into ½-inch cubes
- ¼ cup chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season pork cubes with salt, pepper, and smoked paprika. Add pork to the hot skillet and cook, stirring occasionally, until browned on all sides and cooked through, about 5-7 minutes. Remove pork from skillet and set aside.
- Add the sliced red onion to the same skillet. Cook, stirring occasionally, until softened and lightly browned, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the cubed peaches and cook until they are slightly softened and beginning to caramelize, about 3-4 minutes.
- Return the cooked pork to the skillet. Toss everything together to combine and heat through, about 1-2 minutes.
- Stir in the fresh parsley just before serving.
