Sheet Pan Pork Sausage and Apple Hash
A simple, savory, and slightly sweet sheet pan dinner that’s perfect for busy weeknights.
This sheet pan pork sausage and apple hash is one of my go-to recipes when I'm craving something hearty but don't want a lot of fuss. The combination of savory sausage and sweet apples, roasted until tender and slightly caramelized, is just incredibly comforting. It’s the kind of meal that feels fancy but is so straightforward to make, even if you’re just starting out in the kitchen. You pretty much just chop, toss, and roast – minimal cleanup required!
Ingredients
- 1 lb pork sausage, casing removed
- 2 medium apples (like Honeycrisp or Gala), cored and cut into 1-inch chunks
- 1 large red onion, cut into 1-inch chunks
- 1 lb baby potatoes, halved or quartered if large
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup, if desired.
- In a large bowl, combine the pork sausage, apple chunks, red onion chunks, and baby potatoes.
- Drizzle the olive oil over the ingredients in the bowl.
- Sprinkle the dried thyme, salt, and black pepper over the mixture.
- Toss everything together with your hands or a large spoon until all ingredients are evenly coated with oil and seasonings.
- Spread the mixture in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, or until the sausage is cooked through, the potatoes are tender, and the apples and onions are slightly caramelized, flipping halfway through.
- Serve hot and enjoy!
