Sheet Pan Shrimp Scampi with Orzo

Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz orzo pasta
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup dry white wine (optional, or use chicken broth)
- 1/4 cup chicken broth
- 2 tbsp fresh lemon juice
- 1/4 tsp red pepper flakes
- Salt and freshly ground black pepper to taste
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet or oven-safe pan, combine the uncooked orzo, olive oil, minced garlic, white wine (or broth), chicken broth, lemon juice, and red pepper flakes. Season with salt and pepper.
- Stir everything together until the orzo is evenly coated.
- Place the skillet in the preheated oven and bake for 10 minutes, stirring halfway through.
- Remove the skillet from the oven and add the shrimp to the pan, nestling them into the orzo mixture.
- Return the skillet to the oven and bake for another 8-10 minutes, or until the shrimp are pink and cooked through and the orzo is tender and has absorbed most of the liquid.
- Stir in the chopped fresh parsley.
- Serve immediately with lemon wedges on the side.
