Speedy Lamb and Apple Skillet

I absolutely love finding recipes that are both incredibly flavorful and surprisingly quick to make, and this Speedy Lamb and Apple Skillet is one of my go-to favorites. It brings together the savory depth of lamb with the bright sweetness of apples, creating a balance that's just perfect for a weeknight dinner. Even if you're new to cooking, this dish is so straightforward; you'll be amazed at how easily you can whip up something this delicious in under 30 minutes.
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1/4 tsp salt
- 2 medium apples (like Honeycrisp or Fuji), cored and diced
- 1/2 cup chicken broth
- 1 tbsp Dijon mustard
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground lamb and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic, rosemary, thyme, black pepper, and salt, cooking for another minute until fragrant.
- Stir in the diced apples and cook for 2-3 minutes, allowing them to soften slightly.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the Dijon mustard until well combined. Reduce the heat to low, cover, and let it simmer for 5-7 minutes, or until the apples are tender and the sauce has thickened slightly.
- Serve hot, perhaps with a side of mashed potatoes or crusty bread.
