Speedy Lentil Shepherd's Pie with Sweet Potato Topping

I absolutely adore shepherd's pie, but sometimes it feels like such a commitment. This lentil version is my go-to when I'm craving that ultimate comfort food without spending hours in the kitchen. It uses pantry staples and comes together surprisingly fast, making it perfect for a busy weeknight. Don't worry if you're new to cooking; the steps are straightforward and forgiving, so you'll have a delicious, satisfying meal on the table in no time.
Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 cup brown or green lentils, rinsed
- 4 cups vegetable broth
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce (vegan if needed)
- Salt and black pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter or vegan butter
- 1/4 cup milk or unsweetened plant-based milk
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery and cook until softened, about 8-10 minutes.
- Stir in minced garlic, thyme, and rosemary and cook for 1 minute until fragrant.
- Add the rinsed lentils, vegetable broth, tomato paste, and Worcestershire sauce to the skillet. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender and most of the liquid has been absorbed. Season with salt and pepper.
- While the lentils are simmering, place the cubed sweet potatoes in a large saucepan, cover with water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender.
- Drain the sweet potatoes and return them to the saucepan. Add butter and milk, then mash until smooth. Season with salt and pepper.
- Pour the lentil mixture into a 9x13 inch baking dish.
- Spoon the mashed sweet potato evenly over the lentil filling, spreading it to the edges.
- Bake for 15-20 minutes, or until the topping is lightly golden and the filling is bubbly.
- Let stand for 5 minutes before serving.
