Speedy Pork and Broccoli Stir-Fry
A quick and flavorful weeknight stir-fry with tender pork and crisp broccoli.
I love a good stir-fry because it's incredibly versatile and quick enough for any busy weeknight. This Speedy Pork and Broccoli Stir-Fry is one of my go-to recipes when I want something satisfying without spending hours in the kitchen. The combination of tender pork, crisp broccoli, and a savory sauce is just delicious, and it's so simple that even beginner cooks can nail it.
Ingredients
- 1 lb pork tenderloin, thinly sliced
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 lb broccoli florets
- 2 tbsp vegetable oil, divided
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Cooked rice, for serving
Instructions
- In a medium bowl, toss the thinly sliced pork with 1 tbsp soy sauce and 1 tsp cornstarch. Set aside to marinate for at least 10 minutes.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork in a single layer and cook until browned on all sides, about 3-4 minutes. Remove the pork from the skillet and set aside.
- Add the remaining 1 tbsp of vegetable oil to the same skillet. Add the broccoli florets and stir-fry for 3-5 minutes, until they are bright green and tender-crisp.
- Add the minced garlic and grated ginger to the skillet with the broccoli and stir-fry for 30 seconds until fragrant.
- In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce, rice vinegar, and sesame oil.
- Return the cooked pork to the skillet with the broccoli. Pour the sauce over everything and toss to coat. Cook for another 1-2 minutes, until the sauce has thickened slightly and coats the ingredients.
- Serve immediately over cooked rice.
