Spicy Peanut Noodles with Edamame

I absolutely love how quickly I can whip up these Spicy Peanut Noodles with Edamame for a satisfying dinner. It feels so indulgent with that creamy, spicy peanut sauce, but it's surprisingly simple to make. Even if you're new to cooking, this recipe is incredibly forgiving and delivers a big flavor payoff with minimal effort.
Ingredients
- 8 ounces spaghetti or linguine
- 1 cup shelled edamame (frozen or fresh)
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1-2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (or more, to taste)
- 1/4 cup hot water (or more, to reach desired consistency)
- Optional garnishes: chopped peanuts, sliced green onions, cilantro
Instructions
- Cook the pasta according to package directions in a large pot of boiling salted water. Add the edamame during the last 3-4 minutes of cooking.
- While the pasta cooks, prepare the peanut sauce. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes.
- Gradually whisk in the hot water, a tablespoon at a time, until the sauce is smooth and reaches your desired consistency. It should be pourable but still creamy.
- Drain the pasta and edamame using a colander. Return the drained pasta and edamame to the empty pot.
- Pour the peanut sauce over the hot pasta and edamame. Toss well to coat everything evenly.
- Serve immediately, garnished with chopped peanuts, sliced green onions, or cilantro if desired.
